Ingredients
  

Vegetables

  • 1 piece English cucumber Chopped
  • 1/2 cup sweet white onion Chopped

Pasta

  • 8 ounces medium pasta (like penne or rotini) Cook according to package instructions

Dressing

  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons fresh dill Chopped
  • 2 tablespoons vinegar
  • Black pepper To taste

Preparation

  • Cook the pasta according to the package instructions. Drain and let cool.
  • While the pasta cools, chop the English cucumber and sweet white onion.
  • In a large bowl, mix the sour cream, mayonnaise, sugar, salt, dill, vinegar, and black pepper.
  • Add the cooled pasta, cucumber, and onion to the bowl. Mix everything together until well combined.
  • Cover the salad and refrigerate for at least 30 minutes to allow the flavors to blend.

Notes

This salad is best served cold and can be made a day ahead. Store in an airtight container in the refrigerator for 3-4 days. Stir before serving as the dressing may thicken. To lighten it up, use Greek yogurt instead of sour cream or mayonnaise.
