  • 2 cups rolled oats
  • 1 cup unsweetened applesauce
  • 1 cup diced apples Freshly diced
  • 1/2 cup honey or maple syrup Choose based on preference
  • 1/2 cup milk Can use dairy or non-dairy
  • 2 pcs eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the rolled oats, applesauce, diced apples, honey or maple syrup, milk, eggs, cinnamon, baking powder, baking soda, salt, and vanilla extract. Mix until everything is well blended.
  • Grease a 9×13 inch baking dish to prevent the cake from sticking.
  • Pour the batter into the prepared baking dish, spreading it out evenly.

Baking

  • Place the dish in your preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Serving

  • Let the cake cool for a few minutes, then cut it into squares. Serve warm, optionally topped with a drizzle of honey or yogurt.

Notes

Store on the counter for 1-2 days, in the fridge for up to a week, or freeze for up to 3 months. Reheat slices in the microwave for 20-30 seconds, or in the oven at 350°F for 10 minutes.
