  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 tablespoon avocado oil
  • 2 cups cooked green beans
  • 1 cup cooked white rice

Sauce Ingredients

  • 1/4 cup coconut aminos
  • 1 tablespoon honey
  • 1 tablespoon toasted sesame oil
  • 1/2 teaspoon ground ginger
  • 1 tablespoon garlic cloves, minced
  • 2 tablespoons rice vinegar
  • 1/4 teaspoon black pepper
  • 1 teaspoon lime zest (zest of one lime)
  • 1 tablespoon lime juice (juice of one lime)
  • 1 tablespoon sesame seeds (for garnish)

Instructions
 

Preparation

  • Prep your chicken by cutting it into small cubes.
  • Cook the white rice and green beans according to their directions.

Cooking

  • In a pan, heat the avocado oil for about 1 minute.
  • Add the chicken to the pan and sauté over medium-high heat until browned on all sides, about 10-12 minutes.
  • While the chicken is cooking, whisk together the sauce ingredients in a bowl.
  • Once the chicken is cooked, remove it from the pan and set aside.
  • Pour the sauce mixture into the hot pan and cook for 3-5 minutes over medium-high heat until it starts to bubble, stirring consistently.
  • Add the cooked chicken back into the pan and coat it in the sauce.

Serving

  • Serve the sesame chicken over the cooked rice and green beans.

Notes

To store any leftovers, let the chicken cool down to room temperature. Place in an airtight container and refrigerate for up to 3 days. For extra flavor, marinate the chicken in the sauce for 30 minutes before cooking. Options include substituting avocado oil for olive oil, adding other vegetables like bell peppers or broccoli, or using quinoa instead of rice. You can also swap chicken for tofu or shrimp.
