Preparation

  • Grate the sweet potatoes using a box grater or food processor.
  • Squeeze out excess moisture by transferring the grated sweet potatoes to a clean kitchen towel, gathering them in the center and twisting to squeeze out as much moisture as possible.
  • Finely chop the onion into small pieces.
  • In a mixing bowl, combine the grated sweet potatoes, chopped onion, olive oil, salt, pepper, and any optional seasonings. Stir well until everything is evenly coated.

Cooking

  • Heat a non-stick skillet over medium heat and add a little olive oil.
  • Spoon the sweet potato mixture into the skillet, flattening it to form pancake shapes.
  • Cook for about 4-5 minutes on each side or until golden brown and crispy.
  • Serve warm.

Notes

Mistakes to avoid: Don't rush the cooking process; ensure hash browns get crispy. Used a cast-iron skillet for even heat distribution and crispiness. Grate a larger batch of sweet potatoes and freeze some for future meals.
