Honey Balsamic Roasted Carrots

  • 1 lb. carrots, washed & peeled (or unpeeled)
  • 1 Tbsp avocado oil (or olive oil)
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • ¼ tsp salt
  • Cracked black pepper, to taste
  • ¼ cup goat cheese, crumbled (optional) Optional for serving

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Prepare the carrots by slicing both ends off. Cut them on the bias into thirds or roughly into 1½ inch pieces.
  • In a large bowl, whisk together 1 tablespoon of balsamic vinegar, 1 tablespoon of honey, and your chosen oil.
  • Add the minced garlic, dried thyme, salt, and cracked black pepper to the bowl with the carrot pieces. Toss until fully coated.
  • Using a slotted spoon, remove the carrots from the bowl and spread them out onto your prepared baking sheet. Reserve the remaining liquid.

Cooking

  • Roast the carrots for 20-25 minutes or until tender. Halfway through, brush the reserved liquid over the carrots.
  • After removing the carrots from the oven, mix the remaining 1 tablespoon of balsamic vinegar and 1 tablespoon of honey together. Drizzle this over the roasted carrots and give them a light toss.
  • Sprinkle crumbled goat cheese over the top if desired, and serve immediately.

Notes

Don’t overcrowd your carrots for optimal roasting. Adjust sweetness to taste by adding more honey if desired. For added crunch, consider adding chopped nuts during the last five minutes of roasting.
