  • 1 cup cauliflower, chopped Can be replaced with other low-carb vegetables like zucchini or spinach.
  • 1 cup celery, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Cooking Instructions

  • In a large pot, brown the ground beef over medium heat, then drain excess fat.
  • Add onion and garlic, sautéing until softened.
  • Stir in beef broth, cauliflower, celery, and Italian seasoning.
  • Bring to a boil, then reduce heat and simmer for 20 minutes until vegetables are tender.
  • Stir in heavy cream and cheddar cheese, cooking until cheese is melted and soup is creamy.
  • Season with salt and pepper to taste.

Notes
