Ingredients
  

Main Ingredients

  • 1 lb ground chicken Can substitute with ground turkey or lean beef.
  • 3 large zucchinis, halved lengthwise and scooped Or 4 small zucchinis.
  • 2 cups marinara or pasta sauce, no sugar added Any sugar-free sauce will work.
  • 3 cups freshly shredded mozzarella cheese
  • 1 cup shredded Parmesan cheese
  • Salt, pepper, and garlic powder to taste

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Slice the zucchinis in half lengthwise. Using a spoon, scoop out the center to create ‘boats’. Lightly salt the inside of the boats and set aside for a few minutes.

Cooking Chicken

  • In a skillet over medium heat, add the ground chicken and season with salt, pepper, and garlic powder. Cook until browned (about 5-7 minutes).

Adding Sauce

  • Pour marinara sauce into the skillet with the browned chicken and simmer for 5–7 minutes to meld flavors.

Assembly

  • Place zucchini halves in a baking dish and fill each with the chicken and marinara mixture.
  • Sprinkle shredded mozzarella over each zucchini and top with Parmesan cheese.

Baking

  • Bake for 20–25 minutes, until cheese is melted. Broil on high for 2–3 minutes for a crispy top.

Serving

  • Garnish with fresh parsley if desired and serve warm.

Notes

Don't over-scoop the zucchini. Use quality marinara to enhance flavor. Adjust seasonings to taste.
