Vegetables

  • 1 cup Bell peppers, chopped
  • 1 cup Zucchini, chopped
  • 1 cup Spinach, fresh

Broth or Stock

  • 2 cups Chicken or beef broth For flavor.

Seasonings

  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Optional Toppings

  • 1 cup Cheese, shredded For serving.
  • 1/2 cup Fresh herbs Such as parsley or cilantro.
  • Avocado or sour cream For optional topping.

Preparation

  • Layer your chopped vegetables on top of the meat. You can use any combination of bell peppers, zucchini, and spinach.
  • Gradually pour in enough broth or stock until all the ingredients are just covered.
  • Sprinkle your desired spices and herbs evenly over the top.

Cooking

  • Cover the lid and set your slow cooker to low for 6-8 hours or high for 3-4 hours, depending on your available time.
  • Once cooked, serve the meal warm with optional toppings like cheese or fresh herbs.

Notes

For extra flavor, try searing the protein in a skillet before adding it to the slow cooker. Ensure you don't overfill your slow cooker; it's better to have too little than too much.
