Ingredients
  

For the Marinade

  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice Freshly squeezed for best flavor
  • 2 cloves garlic, minced fine
  • 1 tsp dried oregano (preferably Mediterranean oregano)
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1/2 tsp sweet paprika
  • 1 tsp salt Or to taste
  • 1/2 tsp freshly ground black pepper

For the Chicken

  • 4 pieces boneless, skinless chicken breasts (about 6 oz each)

Instructions
 

Preparation

  • In a medium bowl, whisk together olive oil, fresh lemon juice, minced garlic, oregano, basil, thyme, paprika, salt, and pepper until well combined and emulsified.
  • Place chicken breasts in a large resealable bag or shallow dish. Pour the marinade over the chicken, ensuring each breast is completely coated. Massage gently to distribute the marinade.
  • Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 24 hours for deeper flavor.

Grilling

  • Preheat your grill to medium-high heat and clean the grates thoroughly. Lightly oil the grates to prevent sticking.
  • Remove chicken from the marinade, allowing excess to drip off. Discard used marinade for food safety.
  • Grill chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
  • Remove from grill and let rest for 5 minutes before slicing. This allows the juices to redistribute for maximum tenderness.

Notes

Serve with a side of grilled vegetables, a fresh salad, or some fluffy rice. For extra flavor, try adding some crushed red pepper flakes to the marinade.
