Ingredients
  

For the Steak Marinade

  • 1 lb sirloin steak (about 1-inch thick)
  • 3 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper

For the Bowl

  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional for paleo or keto)
  • 1 cup cherry tomatoes (halved)
  • 1 small cucumber (diced)
  • ½ small red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • cup feta cheese (crumbled; optional for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)

For the Tzatziki Sauce

  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ small cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh)
  • 1 clove garlic (minced)
  • 1 tbsp fresh dill (chopped)
  • to taste Salt & pepper

For the Vinaigrette

  • 3 tbsp olive oil
  • 2 tbsp lemon juice (fresh)
  • 1 tsp honey (omit for Whole30)
  • 1 clove garlic (minced)
  • ½ tsp dried oregano
  • to taste Salt & pepper

Instructions
 

Marinate the Steak

  • Mix the marinade ingredients: olive oil, minced garlic, lemon juice, oregano, thyme, salt, and black pepper in a bowl.
  • Coat the sirloin steak with this mixture and let it marinate for 30 minutes to 4 hours.

Prepare the Tzatziki

  • In a separate bowl, mix Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper.
  • Chill in the fridge.

Make the Vinaigrette

  • Whisk together the olive oil, lemon juice, honey, minced garlic, oregano, salt, and pepper.

Cook the Steak

  • Heat a skillet over medium-high heat and sear the marinated steak for 4–5 minutes on each side until cooked to your liking.
  • Allow it to rest before slicing it thinly.

Assemble the Bowl

  • Layer the cooked grains, sliced steak, cherry tomatoes, cucumber, red onion, kalamata olives, feta cheese, and fresh herbs.
  • Drizzle with tzatziki and vinaigrette.

Notes

For more flavor, let the steak marinate longer, up to 4 hours if possible. You can substitute any grain you prefer or use a mix for added texture. Feel free to add your favorite veggies or toppings to personalize the dish.
