  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 1 can (10 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 bag (9 oz) tortilla chips, slightly crushed
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/4 cup diced green onions (optional)
  • to taste salsa and sour cream for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish.
  • In a large skillet, cook the ground beef over medium heat until it is browned. Drain any excess fat.
  • Stir in the taco seasoning according to the package instructions and cook for another 2-3 minutes.
  • Once the beef is seasoned, add the Rotel tomatoes, cream of chicken soup, and sour cream. Stir until the mixture is well combined.

Assembly

  • In the prepared casserole dish, spread a layer of crushed tortilla chips at the bottom.
  • Pour half of the beef mixture on top.
  • Add a layer of corn, black beans, and half of the shredded cheese.
  • Repeat the layering process with the remaining beef mixture, chips, and cheese.

Baking

  • Cover the casserole with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.

Serving

  • Top with diced green onions if desired, and serve with salsa and sour cream on the side.

Notes

To add a smoky flavor, mix in a dash of chipotle powder or smoked paprika with the taco seasoning. You can also prepare the beef mixture ahead of time and store it in the refrigerator.
