  • 8 ounces pasta (such as rotini or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup pesto sauce
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Preparation

  • Cook the pasta according to package instructions until al dente. Drain and let cool.
  • In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, black olives, and feta cheese.
  • Add the pesto sauce and toss until everything is well coated.
  • Season with salt and pepper to taste.
  • Garnish with fresh basil leaves before serving.

Notes

Pesto Pasta Salad can be served chilled or at room temperature. It pairs well with grilled meats or can be enjoyed as a light main course. For storage, place in an airtight container in the fridge for 3 to 5 days; if the pasta absorbs the sauce, add more pesto or olive oil.
