Ingredients
  

Dry Ingredients

  • 1 cup all-purpose almond flour or oat flour
  • 1 scoop protein powder (flavor of your choice)
  • 1 teaspoon baking powder
  • a pinch salt for flavor balance

Wet Ingredients

  • ½ cup natural peanut butter or almond butter
  • ¼ cup honey or maple syrup or your preferred sweetener
  • 1 large egg or flax egg for vegan option
  • 1 teaspoon vanilla extract optional for added flavor

Optional Mix-Ins

  • ¼ cup dark chocolate chips
  • 2 tablespoons chopped nuts or seeds
  • 2 tablespoons dried fruit such as raisins or cranberries

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix wet ingredients: peanut butter, honey, egg, and vanilla until smooth.
  • In a separate bowl, whisk together dry ingredients: almond flour, protein powder, baking powder, and salt.
  • Gradually mix dry ingredients into the wet mixture until a dough forms. If too dry, add 1-2 tablespoons of almond milk or water.

Baking

  • Fold in desired mix-ins like chocolate chips, nuts, or dried fruit.
  • Scoop dough onto the baking sheet, forming cookie shapes and flattening each slightly.
  • Bake for 10-12 minutes. Remove from oven and allow to cool for 5 minutes before transferring to a wire rack.

Notes

Protein cookies can be stored for up to 3 days at room temperature or refrigerated for as long as 1 week. They can also be frozen for up to 3 months.
