Streusel Topping

Preparation

  • Prepare the Streusel Topping: In a small bowl, mix together the flour, brown sugar, and cinnamon. Cut in the softened butter until the mixture resembles coarse crumbs. Set aside.
  • Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease lightly.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  • In a large mixing bowl, whisk together the pumpkin puree, oil, eggs, granulated sugar, brown sugar, and vanilla extract until smooth.

  • Gently fold in the diced apples.

Baking
