  • 1/4 cup regular or non-dairy yogurt option to use 2 eggs instead
  • 1 cup unsweetened oat or almond milk option to use regular milk or cream
  • 1 tsp vanilla
  • 1 1/2 tsp pumpkin pie spices
  • 2 tbsp maple syrup optional
  • 1 loaf regular or gluten-free bread about 16 slices
  • Regular or vegan amount butter for frying

Spices

  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/8 tsp cloves

Toppings

  • As needed amount cinnamon
  • As needed amount powdered sugar
  • As needed amount maple syrup

Instructions
 

Preparation

  • In a large bowl, whisk together the pumpkin puree, yogurt (or eggs), oat milk, vanilla, pumpkin pie spices, and maple syrup until smooth.
  • Heat a skillet over medium heat and add some butter.
  • Take a slice of bread and dip it into the pumpkin mixture, ensuring it’s fully coated.
  • Place the coated bread slice in the skillet and cook for about 2-3 minutes on each side, or until golden brown.
  • Repeat this process with the remaining bread slices, adding more butter as needed.

Serving

  • Serve warm, topped with a sprinkle of cinnamon, powdered sugar, and drizzles of maple syrup.

Notes

For a fluffier texture, use the yogurt option rather than eggs. Experiment with different types of bread, like brioche or sourdough, for varied flavor and texture. Consider adding chopped nuts to the pumpkin mixture for a nuttier taste.
