  • 1/2 cup Milk or cream Optional for creaminess.
  • 1 cup Vegetable or chicken broth For cooking.
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Pepper To taste.

Seasonings

  • 1 teaspoon Rosemary Fresh or dried.
  • 1/2 teaspoon Nutmeg For flavoring.

Instructions
 

Preparation

  • Wash the purple sweet potatoes under cold water and scrub off any dirt.
  • Peel the potatoes if desired, and cut them into even-sized cubes.

Cooking

  • In a large pot, add peeled and cut sweet potatoes along with broth. Bring to a boil.
  • Reduce heat and simmer until the sweet potatoes are tender, about 20-25 minutes.
  • Drain and return the sweet potatoes to the pot. Add olive oil or butter, milk or cream, salt, pepper, and other seasonings. Mash until smooth.

Serving

  • Serve warm as a side dish, garnished with fresh herbs and a drizzle of olive oil if desired.
