  • 3 large large purple sweet potatoes Approximately 1.5 pounds
  • 1/4 cup unsalted butter
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • to taste salt
  • to taste pepper
  • 1/4 cup vegetable broth Optional for desired consistency

Instructions
 

Preparation

  • Wash and peel the purple sweet potatoes.
  • Chop potatoes into uniform 1-inch cubes.
  • Boil cubed potatoes in salted water for 15-20 minutes until tender.
  • Drain potatoes completely.
  • Mash potatoes with melted butter, ginger, and nutmeg.
  • Add vegetable broth if needed for desired consistency.
  • Season with salt and pepper to taste.

Notes

For an extra creamy texture, add a splash of coconut milk. Store leftovers in an airtight container in the fridge for up to 5 days.
