Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups granulated sugar
  • 6 tbsp unsalted butter (melted)

Filling

  • 4 packages (8 oz) cream cheese (softened)
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs Add one at a time, do not overmix.

Blueberry Swirl

  • 1 cup fresh or frozen blueberries Thaw and drain if using frozen.
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 2 tbsp water

Garnish

  • Edible silver dust or sprinkles For a starry night effect.

Preparation

  • Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  • In a bowl, mix graham cracker crumbs, ¼ cup sugar, and melted butter until combined.
  • Press the mixture firmly into the bottom of the pan, creating an even layer.
  • Bake for 8-10 minutes, then let cool while preparing the filling.

Filling

  • In a large bowl, beat cream cheese and 1 cup sugar until smooth and creamy.
  • Add sour cream and vanilla extract, mixing until fully combined.
  • Beat in eggs one at a time, mixing just until combined (avoid overmixing to prevent cracks).

Blueberry Swirl

  • In a saucepan over medium heat, combine blueberries, 2 tbsp sugar, and lemon juice.
  • Cook, stirring occasionally, until blueberries break down and release their juices.
  • Mix cornstarch with water to create a slurry, then stir it into the blueberry mixture.
  • Simmer for 2-3 minutes until thickened, then remove from heat and let cool.

Baking

  • Pour the cheesecake batter over the cooled crust, smoothing the top.
  • Spoon dollops of blueberry swirl over the batter and use a skewer or knife to create midnight-inspired swirls.
  • Bake for 50-60 minutes, or until the center is slightly jiggly but set.
  • Turn off the oven and let the cheesecake cool inside for 1 hour, then refrigerate for at least 4 hours or overnight.
  • Dust with edible silver glitter or sprinkles to create a starry, enchanted look.

Notes

Store any leftover cheesecake in the refrigerator for about 4-5 days. It can also be frozen in individual slices for longer storage. Ensure cream cheese is softened beforehand for smooth blending. Avoid overmixing eggs to reduce cracks.
