Rockfish Chowder Ingredients

  • 1 pound fresh rockfish fillets Diced
  • 2 large potatoes Peeled and cubed

  • 2 stalks celery Chopped
  • 4 slices bacon Cooked and crumbled
  • 1 cup heavy cream For chowder richness
  • 4 cups chicken or seafood stock Base for soup

Preparation

  • To prepare the grilled rockfish, marinate the fillets in the lemon-garlic marinade for at least 30 minutes.
  • For baked rockfish, preheat the oven to 400°F (200°C) and prepare the ingredient mixture in a bowl.
  • For chowder, cook bacon in a pot, then set it aside and use the bacon fat for the base of the chowder.

Cooking

  • Grill the marinated rockfish fillets over high heat for a few minutes per side.
  • Bake the rockfish fillets topped with the herb mix for about 12-15 minutes, until opaque.
  • For the chowder, add onions and celery to the pot and sauté until softened, then add stock and potatoes.
  • Simmer the chowder until potatoes are tender, then stir in the rockfish and cream.

Serving

  • Serve grilled rockfish immediately with your favorite sides.
  • Serve baked rockfish hot with a squeeze of lemon.
  • Garnish chowder with crumbled bacon and serve with crusty bread.
