Main Ingredients

  • 2 lbs Boneless, skinless chicken (breasts or thighs) For easy shredding
  • 3 medium Carrots, chopped
  • 2 stalks Celery, chopped
  • 2 medium Potatoes, diced
  • 1 medium Onion, chopped
  • 4 cups Chicken Broth Low sodium preferred
  • 1 tsp Garlic Powder Or fresh garlic, minced
  • 1 tsp Dried Thyme Or fresh if you have it
  • 1 leaf Bay Leaf For extra flavor

Preparation

  • Chop the carrots, celery, potatoes, and onions into bite-sized pieces.
  • Add the chopped vegetables to the slow cooker.
  • Place the boneless, skinless chicken breasts or thighs on top of the vegetables.
  • Sprinkle salt, pepper, garlic powder, and dried thyme over the chicken.
  • Add the bay leaf and pour chicken broth over the mixture.
  • Set the slow cooker on low for 7-8 hours or high for about 4 hours.

Cooking

  • About half an hour before the end of the cooking time, check the stew.
  • If desired, mix a slurry with cornstarch and water to thicken.
  • Shred the chicken with two forks right in the pot or leave it chunky.

Notes

To enhance flavor, use richer chicken broth. For a creamier stew, stir in a bit of heavy cream or Greek yogurt at the end. Store leftovers in airtight containers for up to four days.
