  • 2 pounds boneless, skinless chicken thighs or breasts
  • 3 pieces carrots, diced
  • 3 stalks celery, diced
  • 1 piece onion, diced
  • 4 medium potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 pieces bay leaves

Preparation

  • In a hot skillet over medium-high heat, sear the chicken pieces until they are golden brown.
  • Transfer the seared chicken to the slow cooker.
  • Add the diced carrots, celery, potatoes, and minced garlic.
  • Sprinkle dried thyme, salt, and pepper over the ingredients, then stir gently.
  • Pour the chicken broth over the ingredients. For a thicker stew, whisk in the flour before adding.

Cooking

  • Cover the slow cooker and cook on low for 6–8 hours or on high for 3–4 hours.
  • Once cooked, remove bay leaves and ladle the stew into bowls.
  • Garnish with fresh chopped parsley before serving.

Notes

Mistakes to avoid include skipping the sear step and overcrowding the cooker. Feel free to experiment with different herbs and spices for variations.
