For the Steelhead Trout

  • 4 fillets Steelhead trout Fresh or thawed
  • 1 lemon sliced For baking and garnishing
  • To taste Salt and pepper For seasoning

Preparation

  • Prepare the marinade by combining all ingredients listed under 'For the Marinade' in a bowl.
  • Place the steelhead trout fillets in the marinade and let them soak for 30 minutes to 2 hours.

Cooking Methods

  • Grilling: Preheat the grill to medium-high heat, brush fish with olive oil, season with salt and pepper, and grill for 12-15 minutes, turning once.
  • Baking: Preheat oven to 400°F (200°C), place trout on parchment-lined baking sheet, add lemon slices and herbs, and bake for 10-15 minutes.
  • Pan-Searing: Heat oil in a cast-iron skillet until shimmering, cook fish for 3-4 minutes per side to achieve a golden-brown crust.

Notes

Aim for an internal temperature of 145°F (63°C) for perfectly cooked steelhead trout. This fish pairs well with roasted vegetables, quinoa salad, or lemon-herb couscous.
