  • 1 pound lean chicken breast
  • 1 cup corn, fresh or canned Fresh corn is recommended for better texture.
  • 2 cups cooked rice (white or brown)
  • 1 avocado, diced
  • 2 tablespoons lime juice Can substitute with lemon juice.
  • Salt and pepper to taste Season chicken well for extra flavor.

Optional toppings

Instructions
 

Cooking the Chicken

  • In a skillet, cook the chicken breast over medium heat until fully cooked, about 6-7 minutes per side. Season with salt and pepper.

Preparing the Rice Mixture

  • While the chicken cooks, prepare the rice according to the package instructions.
  • In a large bowl, combine the cooked rice, corn, diced avocado, and lime juice. Toss gently to mix.

Assembly

  • Once the chicken is cooked, slice it and add it on top of the rice mixture.
  • Serve immediately, adding optional toppings as desired.

Notes

Great for lunchboxes! You can mix in other vegetables like bell peppers or black beans for more variety. Store leftovers in an airtight container in the refrigerator for up to 3 days.
