  • 1 cup Pork rind breadcrumbs Use instead of breadcrumbs for a keto-friendly option.
  • ½ cup Grated Parmesan cheese Can substitute with Pecorino Romano or nutritional yeast.
  • to taste Salt Adjust according to preference.
  • to taste Black pepper Adjust according to preference.
  • 1 teaspoon Garlic powder
  • optional Paprika For added flavor.
  • optional Italian seasoning For added flavor.

Preparation

  • Wash the zucchini and slice it into thin rounds, about 1/4 inch thick.
  • In a bowl, mix the pork rind breadcrumbs, grated Parmesan cheese, and spices (salt, pepper, garlic powder) until well blended.
  • Coat each zucchini slice evenly with the breadcrumb mixture, pressing lightly.

Cooking

  • Preheat your air fryer to 400°F (200°C).
  • Arrange the coated zucchini slices in the air fryer basket in a single layer.
  • Cook for about 10-12 minutes, shaking the basket halfway through until golden brown and crispy.

Serving

  • Serve immediately as a snack or appetizer, best enjoyed fresh out of the air fryer.

Notes

For extra crunch, let zucchini slices rest on paper towels for 15-30 minutes before coating. For a spicier kick, add cayenne pepper or chili powder to the breadcrumb mixture.
