Ingredients
  

Sweet Potatoes and Seasoning

  • 3 medium sweet potatoes Cleaned and sliced into ½-inch thick rounds
  • cup melted unsalted butter Can be substituted with olive oil for a dairy-free option
  • 1.5 teaspoons cinnamon Divided between sweet potato seasoning and topping
  • ½ teaspoon salt
  • ½ teaspoon pepper

Topping

  • cup maple syrup Plus 2 tablespoons for topping
  • cup chopped walnuts Can be substituted with pecans or almonds
  • 1 teaspoon thyme Can be substituted with rosemary

Instructions
 

Preparation

  • Start by cleaning the sweet potatoes thoroughly to remove any dirt.
  • Cut them into ½-inch thick rounds. You can keep the skin on for added texture or peel it for a smoother finish.
  • Preheat your oven to 200°C (400°F).

Seasoning

  • In a mixing bowl, combine the sweet potato slices with melted butter, 1 teaspoon of cinnamon, salt, and pepper.
  • Mix thoroughly to ensure each slice is evenly coated.

Roasting

  • Lay the seasoned sweet potato slices in a single layer on a baking tray, ensuring there’s ample space between each slice.
  • Bake in the preheated oven for 25–30 minutes, checking for fork tenderness as the baking time nears completion.

Topping

  • While the sweet potatoes roast, mix the maple syrup, chopped walnuts, the remaining ½ teaspoon of cinnamon, and thyme in a bowl.
  • After 25–30 minutes of baking, remove the baking tray from the oven.
  • Top each sweet potato slice with about 1 teaspoon of the walnut and maple mixture.
  • Return the tray to the oven and bake for an additional 8–10 minutes, or until the topping is caramelized.

Serving

  • Once they are out of the oven, let the sweet potatoes cool slightly.
  • Serve them as is, or sprinkle crumbled feta cheese over the top for added flavor.

Notes

Avoid overcrowding the baking tray for perfect roasting. For a spicy kick, add a pinch of cayenne pepper. You can cut sweet potatoes ahead of time and store them in water in the fridge.
