Ingredients
  

For the Marinade

  • 1.5 lbs 1½ – 2 lbs chicken cutlets You can also use boneless chicken thighs.
  • 0.5 cup 1/2 cup plain full-fat Greek yogurt For non-dairy, use coconut yogurt.
  • 0.25 cup 1/4 cup olive oil Extra for cooking if pan frying.
  • 1 tbsp 1 tbsp honey Can substitute with agave syrup or maple syrup.
  • 1 medium 1 lemon (juiced, about 1/4 cup) Adjust for acidity preference.
  • 1 tsp 1 tsp lemon zest Use fresh for best flavor.
  • 5 cloves 5 garlic cloves (minced) Adjust quantity to taste.
  • 1 tbsp 1 tbsp fresh parsley (chopped fine) Can substitute with other herbs.
  • 0.5 tsp 1/2 tsp salt Add more to taste.
  • 0.25 tsp 1/4 tsp black pepper
  • 0.5 tsp 1/2 tsp paprika
  • 0.5 tsp 1/2 tsp onion powder
  • 0.5 tsp 1/2 tsp dried oregano
  • 0.5 tsp 1/2 tsp dried basil
  • 0.25 tsp 1/4 tsp cayenne pepper Optional for heat.
  • 0.25 tsp 1/4 tsp coriander
  • 0.25 tsp 1/4 tsp cumin

Instructions
 

Preparation

  • In a large bowl, combine the yogurt, olive oil, honey, lemon juice, lemon zest, minced garlic, chopped parsley, salt, pepper, paprika, onion powder, oregano, basil, cayenne pepper, coriander, and cumin.
  • Place the chicken cutlets into the bowl and toss them in the marinade until they are well coated.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour or up to 24 hours for maximum flavor.

Cooking

  • Before cooking, allow the chicken to come to room temperature for about 20 minutes.
  • Cook options: Pan Fry: Heat a non-stick skillet over medium heat, add a drizzle of olive oil, and cook the chicken for about 5-7 minutes on each side until golden and cooked through.
  • Air Fry: Preheat the air fryer to 380°F (193°C) and cook the marinated chicken for approximately 12-15 minutes, flipping halfway.
  • Bake: Preheat the oven to 400°F (200°C). Place the chicken in a baking dish and bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).

Notes

Let the chicken rest for a few minutes after cooking to help redistribute the juices. Avoid skipping the marinating step for best flavor.
