  • 1 tablespoon baking powder Aluminum-free preferred.
  • ¼ cup melted butter or coconut oil Can use olive oil or avocado oil instead.
  • ¼ teaspoon salt
  • ½ teaspoon xanthan gum or psyllium husk powder For texture and structure.
  • ½ cup finely ground almond flour Optional; adds structure without significantly raising carbs.

Baking Instructions

  • Preheat your oven to 350°F (175°C).
  • Prepare your loaf pan by lining it with parchment paper or greasing it thoroughly to prevent sticking.
  • In a large bowl, whisk together the eggs, Greek yogurt, and melted butter (or coconut oil) until smooth and creamy.
  • Gradually add in the baking powder, salt, and xanthan gum or psyllium husk powder. Stir in the almond flour if using. Combine until well mixed and slightly thickened.
  • Pour the batter into your prepared loaf pan and smooth the top evenly using a spatula.
  • Bake in the preheated oven for 35-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack. Allow to cool completely before slicing.

Notes

For added flavor, consider mixing in herbs, spices, or a tablespoon of sweetener while ensuring to monitor the carb count.
