  • 2 medium zucchinis Can substitute with yellow squash or grated carrots.
  • 2 cloves garlic, minced Fresh garlic is preferred.
  • 1 cup breadcrumbs Use panko for extra crispiness or gluten-free breadcrumbs if needed.
  • 1/2 cup grated Parmesan cheese Can substitute with Pecorino Romano or nutritional yeast for a vegan option.
  • 1 large egg Replace with a flax egg for vegan option.
  • to taste salt and pepper

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) if baking, or heat your skillet for frying.
  • Grate the zucchinis using a box grater or food processor.
  • Squeeze out excess moisture from the grated zucchini using a clean dish towel.
  • In a mixing bowl, combine grated zucchini, minced garlic, breadcrumbs, grated Parmesan cheese, egg, salt, and pepper.
  • Mix well until everything is fully incorporated.
  • Take small amounts of the mixture and form into bites or patties, aiming for 1-2 inches in diameter. Wet your hands slightly to prevent sticking.
  • In a skillet over medium heat, add olive oil to coat the bottom of the pan.

Cooking

  • Carefully place the bites in the skillet and fry until golden brown, about 3-4 minutes per side.
  • If baking, place bites on a greased baking sheet and bake for 20-25 minutes, flipping halfway through.
  • Once cooked, transfer to a plate and serve warm.

Notes

Don’t overcrowd the skillet when frying. For added flavor, mix in herbs or red pepper flakes. Prepare a larger batch and freeze leftovers for quick snacks.
